Grinding Pointers
The meat grinder is a critical point of any operation. Your product is either cut correctly or ruined! The best word of advice is to watch your cutting tools and machine. A few small preventive measures can give you consistent quality and production, day in and day out. If your product doesn't flow freely from the head, looks pale, rolls back in the entrance hopper, or the temperature is increasing, call Speco!

DO's
Always keep the plate & knife as a matched set.
Always keep the plate & knife sharp.
Always check for levelness by laying the knife on the plate before inserting in the machine.
Always keep plates & knives lubricated in storage and when starting up the machine.
Always use a coolant when sharpening plates.
Always inspect the plates making sure all holes are clear, and that there are no cracks.
Always call Speco for all your grinder needs!
DONT'S
Never mix different knives to different plates.
Never overtighten the main barrel nose retaining ring on the machine.
Never run the grinder without product. Product is the natural lubricant. Heat can build up so fast that cold product could crack the plate.
Never hit the plate against anything to clean the holes.
Never throw the plates or knives.
Never call anyone except Speco for your grinder needs!
Safety
Always inspect parts for cracks, heat fractures, and discoloring. Never run on parts that have these defects.
Always use O.S.H.A. lockout tagout procedures when changing knives and plates!
Always wear gloves when handling knives and plates.
Never run plates below minimum thickness.

Important! Use Knife and Plate Together
Always use the same knife and plate together. If one has gradually worn away from perfect level, the other will have worn with it. As a result, they may still be used together. If, however, one is matched with a different member which is ground true, the set will certainly not turn out a good product.
